Vegan Red Quinoa Chili




This Chili is sure to pack a punch with plant based protein!

Ingredients

  • 1/2 Cup Quinoa

  • 1/2 Cup Shredded Cheese

  • 1/2 Cup Spinach (Chopped)

  • 1/4 Cup Leek (Chopped)

  • 3 tbsp Trader Joe's Nutritional Yeast

  • 2 tbsp Olive Oil

  • 1/2 tsp Himalayan Pink Salt

  • 3 Garlic Cloves (Minced)

  • 2 Scallions (Chopped)

  • 1 Jar Low Sodium Traditional Marinara Sauce

  • 1 Can Red Kidney Beans

  • 1/2 Red Onion (Chopped)

  • 1 Handful of Cilantro (Chopped)

  • 1 Pinch Cayenne Pepper


Instructions

  1. Sauté garlic, onions, leek, scallions, and spinach in olive oil.

  2. Add beans, quinoa, marinara sauce, cilantro, salt, & cayenne pepper.

  3. Add nutritional yeast for extra thickness & flavor.

  4. Cook covered for 20-25 minutes.

  5. Enjoy with tortilla chips or salad on the side!
