This Chili is sure to pack a punch with plant based protein!
1/2 Cup Quinoa
1/2 Cup Shredded Cheese
1/2 Cup Spinach (Chopped)
1/4 Cup Leek (Chopped)
2 tbsp Olive Oil
1/2 tsp Himalayan Pink Salt
3 Garlic Cloves (Minced)
2 Scallions (Chopped)
1 Jar Low Sodium Traditional Marinara Sauce
1 Can Red Kidney Beans
1/2 Red Onion (Chopped)
1 Handful of Cilantro (Chopped)
1 Pinch Cayenne Pepper
Sauté garlic, onions, leek, scallions, and spinach in olive oil.
Add beans, quinoa, marinara sauce, cilantro, salt, & cayenne pepper.
Add nutritional yeast for extra thickness & flavor.
Cook covered for 20-25 minutes.
Enjoy with tortilla chips or salad on the side!
